Mash / Lauter Tun

Grain is combined with the hot liquor to create a sugar-rich solution by starch conversion called wort. Mashing involves pauses at certain temperatures.

Common temperature: 122-172°F. Mash temperature may be raised to about 167–172°F, a process known as a mashout, which deactivates enzymes.
